Eggs sunny side up over harsh browns with steamed tomatoes…

I went to a restaurant that serves ‘breakfast at any time’. So I ordered Eggs Sunny Side Up during the Renaissance
 
This is probably one of the most simple breakfasts to make. During the week, when running to get ready for work it may be something of more time consuming options. But let me tell you – one of those hung over or long lazy weekend mornings – this is something to crave for ;).
Ingredients:
* A few raw potatoes with the skin
* As many eggs as you plan on eating
* Tomatoes – halved, stems removed
* Salt, pepper, a dash of extra virgin olive oil
 
Overall it does take just about 15 minutes…
 
Grate the potatoes, in the meantime heating up the pan with a dash of olive oil. Add a pinch of salt and fresh ground pepper to the potatoes. Once the oil is heated up, fry the potato patties, turning once when golden (about 3 minutes per side). When the patties (fritters) are done, place them on the paper towel to get all excess oil out.


 
Cook the eggs on the pan. I crack them in a small bowl and then transfer to a hot pan – this time avoiding breaking the yolk. Cover the pan with the lid and cook until the top of the yolk also looks white.
 
 
In the meantime, in a separate pan, cook the tomatoes – halved, stems removed, the cut facing up – sprinkle with some salt and pepper, add some herbs if desired. Cook covered for 5-7 minutes, until softened.
 
Plate and enjoy 🙂
