Nowadays in Lithuania feels like a tropical paradise – well at least for those that love hot weather. If thinking of a creamy, rich or sweet dessert at such temperatures doesn’t sound anywhere close to appealing, go for this one – it will hit the spot.
A friend tasted the jelly and after a while commented – “getting tipsy while drinking champagne is understandable, but getting tipsy when eating it – that’s something new” :).
Amazingly easy to make!
Ingredients:
- 1 bottle of sparkling wine (I always use brut)
- 150 – 200 ml elder flower syrup
- 250 – 300 g blueberries (cultivated)
- 6 teaspoons of gelatin
Dissolve gelatin in a glass of water and heat it up a bit to dissolve completely. Once done – mix the liquid with elder flower syrup, sparkling wine and berries. And this is it. Refrigerate until the right consistency – I simply make it the night before and refrigerate over night.

Bon appétit!
P.S. Don’t eat and drive 😉
