Omelette with smoked mackerel, broccoli and mushrooms

My favorite meal of the day! And I think I can claim that this is my favorite omelette – or rather one of the favorites – plus or minus broccoli, spinach or some other greens. The first time I ever tried an omelette with smoked mackerel was at a restaurant. With such amazing ingredients couldn’t figure out how it could be that plain and bland.

And what a treat on a day when you can sleep in, wake up when you’re done with sleep and not when the alarm tells you to and then enjoy a long leisurely breakfast with a cup of coffee!

On a day like this – red color is missing in the photo, but it was served on a side – cherry tomatoes. Yellow, green and red – the colors of Lithuanian flag, on a celebration of our 25 years of independence!

Ingredients (serving 2 or 1 very hungry person):

  • 2 eggs
  • Handful of mushrooms
  • A few stems of broccoli
  • Smoked mackerel
  • 1 tablespoon of olive oil
  • Salt’n’pepper

Heat the olive oil in a pan, add mushrooms and broccoli, cover for 3-5 min on medium heat. Whisk the eggs, add some salt’n’pepper to taste, pour over mushrooms and broccoli. Add pieces of mackerel, cover and let it cook until done.

As simple as that – cooking it covered over medium heat, the bottom doesn’t burn, eggs cook through perfectly and no need to flip it. Also looks much prettier.
