Toast with avocado and scrambled eggs

“There has never been a sadness that can’t be cured by breakfast food”.

I swear sometimes I really look forward to going to bed at night just because I really look forward to breakfast. I’m not sure if I know another person, who actually gets up earlier for work so I could enjoy my leisurely breakfast without any rush. And that is almost without any exceptions. “Almost” only amounts to super early mornings when I fly somewhere at an unreasonable hour. Other than that breakfast is a must. And then it comes natural I guess that one of my top favourite ingredients is an egg. It serves as a main dish, a side, sauce to salads, key ingredient in dessert and bakery and a number of other shapes and forms.

There are many options to be served for breakfast. My choices usually range between porridges, eggs, sandwiches with various ingredients. And I love love love this combination – it’s like marrying a sandwich and eggs. Two dishes in one and very good.

Ingredients:

  • Bread of your choice
  • Avocado
  • Cherry tomatoes
  • Eggs
  • Butter
  • Arugula salad
  • Salt’n’pepper

Toast bread. Peel avocado and mash with a fork, add dices cherry tomatoes, salt and pepper taste. Spread the avocado and tomato mix on the bread. In the meantime – prepare the eggs. I will praise the butter in this case, although you may want to go with olive oil, but to me scrambled eggs are best made with a little piece of butter. Once the eggs are done, put them on avocado, top with arugula and serve.

Experiment with your favourite ingredients – use salted salmon or goat cheese instead or with the avocado. And remember – never work before breakfast! If you have to work before breakfast, eat your breakfast first :).
