I love those days when there’s plenty of time for a long, leisurely breakfast and no need nor wish to hurry anywhere. It’s a true happy place. Top that with a day off, sunshine on the terrace and a glass of chilled bubbles to accompany the food. But then I guess it falls into brunch category. And “brunch without champagne is just a sad late breakfast”.
Yesterday my Love asked me what we’ll have for breakfast and I asked him whether he wanted something he has not had before. Needless to say, of course he said yes! With a ton of fresh zucchinis from my parents’ garden I thought of zucchini pancakes, fritters or… waffles! And it worked perfectly – made very easily, with as little as 7 ingredients, spices included.
Ingredients:
- 1 medium zucchini
- 2 eggs
- 4-6 tablespoons of flour
- A pinch of chilli
- Tzatziki (or substitute with a few cloves of chopped fresh garlic)
- Salt’n’pepper
- Lightly smoked salmon
P.S. Bubbles don’t count as an ingredient, do they?
Grate the zucchini, let it sit for 10-20 minutes in a colander to drain excess liquid. Mix with eggs, flour, chilli, tzatziki (or garlic), salt and pepper. Heat the waffle pan and cook until browned. Those waffles will be soft and tender – don’t expect them to be crispy.
While cooking one by one, we layered them with slices of lightly smoked salmon. Once all were done, we cut the pile in half and served for the happy two people.
