Buckwheat with quail eggs and smoked salmon

Say good morning to your body – eat breakfast!

We’ve been dog-sitting our friends’ lab. A big bundle of fluffy joy. And we almost got used to being woken up at sunrise. Bare in mind the sun does come up very early this time of year. On one hand it is so tempting to sleep in on a day off. On the other hand it feels unbelievable to go for a run with our four legged friend while the neighbourhood is still asleep.

So by 9 am this morning we were post run, post shower and sitting down for a leisurely breakfast on the terrace. Our breakfast was as simple as the morning itself – just some buckwheat – with smoked salmon and quail eggs #smirk…

I personally like buckwheat in all shapes and forms – it is so so good plain or with a little bit of extras on the side. Try mushrooms instead next time.

Savoury breakfast – buckwheat with quail eggs and smoked salmon

  • 1 cup Buckwheat
  • 1 Red onion
  • 50 g Smoked salmon
  • 6 Quail eggs
  • 1 tbsp Butter
  • Provence herbs
  • Fresh dill
  • Salt’n’pepper
  1. Boil buckwheat or use some if you have leftovers. My proportions – 1 unit of buckwheat/2 units of water. Cook it to your liking. I love mine al dente plus it will be pan fried for a few minutes.
  2. Once the buckwheat is done, slice the onion and cook it in a bit of butter till softened. Add some dried herbs, a pinch of chilli if you fancy a spiced up plated of food in the morning.
  3. Add buckwheat. Fry for a few minutes. Add diced salmon on top, crack the eggs and give it another minute of two, depending on the way you like your eggs.
  4. And this is it. The breakfast is done!
